Cabernet/Merlot Rosé 2007 - Dry

Tasting Notes:		Has a lively acidity, plenty of strawberry fruits and a persistent finish.
Food Suggestions:		Various meats
Colour:		A bright pink colour
Nose:		Aromas redolent of strawberries and candy floss
Blend Information:		70% Cabernet Sauvignon, 30% Merlot
Ageing Potential:		Ready to enjoy now

Vinification:		The grapes were handpicked before being destemmed and crushed. Once in tank juice was drawn or “bled” from both the Cabernet and Merlot tanks and the resultant pink coloured wine allowed to settle. Cool fermentation followed to preserve the aromas before a short lees contact and bottling.
Technical Analysis:		Residual Sugar : 2.0 g/l Total Acidity : 5.9 g/l pH : 3.22 Alcohol : 14.0 %
