Vinification:   The grapes were picked when fully ripe.Prior to homogenisation, 30% of the juice was drawn off the tank to increase the wine's concentration.The fermentation with vin13 was conducted at 27-30 degrees C and pump overs were vigorant and frequent and were done by hand and not by irrigation.The wine fermented completely dry before pressing wchich, due to super ripe grapes, allowed a harder pressing to draw out more of the rich extracts from the grapes.After malolactic the wine received 18 months ageing in new French oak barrels.The wine was lightly filtered prior to bottling.
