| Vinification: |
| The grapes were picked fully ripe.The fermantation with SC22 was conducted at 27-30 degrees C and pump overs were vigorous and frequent and done by hand and not by irrigation.The wine fermented completely dry before pressing which due to the super ripe grapes allowed a harded pressing to draw out more of the rich extracts from the grapes.After malolactic the wine received 18 months ageing in 100% French oak barrels.The wine was lightly filtered prior to bottling. |
