| Vinification: |
| The grapes were picked full ripe.Prior to homogenisation, 30% of the juice was drawn off the tank to increase the wine's concentration.The fermentation with vin13 was conducted at 27-30 degrees C and pump overs were vigorant and frequent and were done by hand and not by irrigation.The wine fermented completely dry before pressing wchich, due to super ripe grapes, allowed a harder pressing to draw out more of the rich extracts from the grapes.After malolactic the wine received 18 months ageing in 80% new French oak barrels and 20% second fill before being blended.The wine was lightly filtered prior to bottling. |
