This full - bodied, rich and elegant wine possesses oregano, tobacco, and vanilla flavours.Massively structured, foursquare and complex, this intense wine lingers long on the finish to make this a wine of character.


Food Suggestions:
 

Sunday lunch. Roast beef, Yorkshire pudding, roast potatoes and all the trimmings as well as mature cheddar or Stilton for dessert.

Colour:   

Deep red, full colour to the rim.

Nose:
 Quite aromatic with blackcurrant and black cherry flavours.The smoky nose reveals cigar box and cedarwood aromas.

51% Cabernet Sauvignon, 49 % Merlot

Ageing Potential:  Bottled with the view to ageing, this wine will cellar well for 7 years.

Vinification:   The grapes were picked full ripe.Prior to homogenisation, 30% of the juice was drawn off the tank to increase the wine's concentration.The fermentation with vin13 was conducted at 27-30 degrees C and pump overs were vigorant and frequent and were done by hand and not by irrigation.The wine fermented completely dry before pressing wchich, due to super ripe grapes, allowed a harder pressing to draw out more of the rich extracts from the grapes.After malolactic the wine received 18 months ageing in 80% new French oak barrels and 20% second fill before being blended.The wine was lightly filtered prior to bottling.
